One officer was slashed across the back with a makeshift knife after intervening to break up an attack on an inmate.
A second officer was then injured while trying to subdue another inmate.
Both officers have been taken to Portlaoise hospital for treatment.
Gardai and the Prison Service are conducting investigations into the events, which happened in E wing, an area where sex offenders are housed.
